Mince and noodle casserole

Fry mince, an onion and a diced red pepper until all are cooked.

Add sweetcorn, a small amount of boiling water (enough to cover) and a stock cube. leave to simmer for 5 mins

In the meantime cook some egg noodles in a pan and drain

When the main pan is finished simmering, add the noodles and a tin of tomato soup.

pop in a casserole dish, sprinkle with cheese and cook in the over until cheese bubbles.

Tuna pasta with creamy tomato sauce.

Cook pasta without salt.
Make cheese sauce. Melt 1/2 oz of unsalted butter in pan and stir in 1/2 oz plain flour and cook for 1 minute. Gradually stir in 200 ml of milk, bring to boil and cook for a few minutes over alow heat until thickened and smooth. Stir in grated cheddar cheese, 1 1/2 oz.
Fry onion and garlic until softened, stir in passata or tomatoes and flaked tuna (if canned use in oil NOT brine) and cook for about 4 minutes.
Mix the cheese sauce with the tuna and tomato and then stir in the pasta.

Pasta and Bolognese.

I make it as I would for us, minus the salt. I use a bay leaf or mixed herbs, also sometimes add a dash of Worcestershire sauce. Garlic has to be in it, also can use grated carrot. I have used pasta stars and cut of spaghetti.



Carrots and Lentils.

Fry onion and garlic until softened, then add carrots and cook for a few minutes. Add the washed and drained red lentils and any other veg you may want to add (sweet potato is mentioned but I used normal, celery, etc), add water or homemade stock, bring to boil then simmer for approx 20 mins. I've also used pasta stars instead of potato.



Chicken casserole

Throw in anything!!! Chicken, onion, garlic (Gabbi loves it!!), carrots, potato, leeks, peas, broccoli (I use whatever veg I have in the fridge or freezer, so what ever is on hand), I add flavouring like bay leaf, mixed herbs, thyme, I change it each time so I introduce more flavours. Once cooked, puree, pulse or mash.

Red Lentils with Carrot and Tomato (Annabel Karmel - First Meals book)

1 tbsp sunflower oil
2 large tomatoes, skinned, seeds removed and chopped
2 carrots, grated
1/4 tsp coriander
1/4 tsp cumin (I didn't put this in)
2/3 cups red lentils
1 cup coconut milk
1 1.4 cups veg. stock or water

Heat the oil in a saucepan and saute the tomatoes and carrots gently, stirring, until softened, about 5 minutes. Stir in the spices and cook for 30 seconds. Add the lentils, coconut milk and stock and stir well to mix.

Bring to a boil, then reduce the heat, cover and simmer very gently, stirring occasionally, until the lentils are soft, about 20 minutes. Add 1 - 2 tbsp water if the mix gets too dry during cooking. (I found mine had too much liquid and did not have a mashed texture, mine was more like soup)

Cool slightly, then transfer to a blender and blend to a puree. Alternatively, mash to desired consistency. Serve warm.

Carrot & Courgette with rice (4-6mths)
2 carrots
1 courgette
Water
2 teaspoons baby rice

Method
1. Peel and slice the carrot. Wash and slice the courgette
2. Boil the carrot and courgette together in a small amount of water until tender.
3. Drain, retaining the cooking water
4. Liquidise the carrot and courgette with about 60mls of the cooking water
5. Add the 2 teaspoons of baby rice and stir

(The amount of water and/or baby rice can be altered to get the desired
consistency)

Chicken & Mango (4-6mths)
1 chicken breast
1 carrot
1 parsnip
1 mango

Method
1. Roast or steam the chicken breast until cooked
2. Peel and chop the carrot and parsnip and steam until tender
3. Peel and de stone the mango, cut flesh into rough cubes
4. Puree all ingredients together

Pear and Nectarine Cream (4-6mths)

3 sweet pears
1 nectarine
4 teaspoons baby rice
50ml milk

Method
1. Peel, core and slice the pears, put in a microwaveable dish with a little water. Cover and microwave until tender, drain and cool
2. Peel the nectarine, remove the stone and chop
3. Liquidise the pear, nectarine, baby rice and milk together

Cheesy Caulibrocc Pasta 7months+ (Great for mum and dad too)

1 Cauliflower
1 broccoli
pasta (I use baby pasta)

For the cheese sauce (please note I make in batches so this is for 1pint of sauce)
2oz plain flour
2oz butter
1pint whole milk
3oz mild cheddar grated

steam or boil cauliflower and broccoli for 20 mins when cooked drain and leave to cool. Cook pasta as directed on packet and leave to one side. Melt the butter in a good heavy based sauce pan (you may need 3 hands if you don't have a heavy saucepan) and add the flour. Gently whisk in the milk bit by bit, if you get lumps they can be strained out. Once you have a smooth consistency add half the cheese and stir in once melted add the rest. mash the cauliflower and broccoli together then add the pasta and cheese sauce and mix well. Leave to cool and serve.

Apple & Pear Cereal


(Suitable from 6 months)
1 Apple
1 Pear
Pinch of Cinnamon
2 Drops of Vanilla
Splash water
2 spoons Baby Rice

Put everything apart from baby rice into pan and boil for roughly 5 mins, until fruit is softened.

Blend until smooth.

Add Baby Rice (add milk or water if too thick)

(Tommy cant get enoughof this, which is impressive as hes not a breakfasty baby )

not a recipe as such but i cooked jacket potatoe scooped out the poatoe and mashed up till smooth and then i put a dairylea triangle in it and it will have a smooth creamy consistency, william loved it and it tasted lovely
