Shredded Brussels Sprouts with Pine Nuts and Prosciutto

** I make this without pine nuts due to my allergies.. very yummy for holidays especially :)

1 1/2 pounds (750g) brussels sprouts
1/4 cup (50mL) olive oil
6 slices prosciutto, chopped
3/4 cup (175mL) pine nuts
salt and freshly ground pepper

Remove root end and core from brussels sprouts, cut in half, and thinly slice.

Heat oil in skillet on medium-high heat. Add prosciutto. Saute until beginning to crisp. Add sprouts and saute for 3 minutes. Cover pan and cook 2 minutes longer or until sprouts are crisp-tender.

Toss in pine nuts, saute 1 minute, and season with salt and pepper.

... parmesean cheese tastes good on top of this, and you could add garlic for more flavour as well :)

Another favourite of mine:) Good comfort food.. makes about 10 servings it says.. it seems like a lot of work/ingredients I guess but very delicious and worth it if you like gnocchi especially!

1 14oz (398mL) can of pumpkin puree (NOT pie mix)
1/2lb (225g) creme fraiche
1 1/2 cups (375mL) shredded mozzarella cheese
1 1/2 cups (375mL) shredded cheddar cheese
1/2lb (225g) thick-sliced prosciutto, cut into thin strips
3 roasted red peppers (jarred), drained and diced
1/2 teaspoon (2mL) red pepper flakes
1 teaspoon (5mL) salt
1/2 teaspoon (2mL) pepper
3lb (1.4kg) gnocchi pasta
1/2 cup (125mL) pine nuts, coarsely ground
1 cup (250mL) panko bread crumbs
1/2 cup (125mL) butter, melted

Preheat oven to 400F (200C). Bring a large saucepan of lightly salted water to a boil. Lightly coat a 3L baking pan with cooking spray.

While the water heats, in a large bowl, mix pumpkin puree, creme fraiche, mozzarella and cheddar, proscuitto, roasted red peppers, red pepper flakes, salt, and pepper. Set aside.

When water is boiling, add gnocchi and cook according to package directions (usually just until they float). Reserve 1/4 cup (60mL) of the cooking water, then drain gnocchi.

Return gnocchi to pan, then add cheese mixture. Stir well until everything is thoroughly mixed and cheese is mostly melted. Stir in reserved cooking water.

Transfer gnocchi and sauce to prepared baking pan, spreading it in an even layer. Set aside.

In a small bowl, mix ground pine nuts, bread crumbs, and butter. Sprinkle bread crumb mixture evenly over gnocchi, then bake for 15 minutes or until lightly browned.

PS I'm cooking this today. :)

I *adore* these. I first tasted them when I was living in the states, and since I've been living in the UK I've changed the recipe several times over until I feel it's perfect.

Prep time: about 10mins
Cook time: about 30mins

3 tins of heinz baked beans
1/3   cup treacle
2 	tablespoons brown sugar
1 	teaspoon dry mustard
1 	teaspoon salt
1 	teaspoon ground black pepper
2      tablespoons Worcestershire sauce
6      tablespoons ketchup
1 	large onion, diced

* heat pan with a little oil and fry the onions until soft (not brown).

* Place beans in ovenproof dish.

* In a saucepan, combine treacle, sugar, mustard, salt, pepper, ketchup and worcestershire sauce. Bring the mixture to a slow boil and pour over beans and mix through.

* add in cooked onions.

* cover with foil and bake for 30mins on Gas Mark 4/180C/350F

You can also add cooked bacon to this recipe. Just dice it, and fry it off with the onions.

:wohoo:

I'm the type of cook who never pays attention to measures and does everything to taste. So if you need measurements then let me know and I'll make this again (as it's so simple) and measure it out. I always make this if I have left over mash from dinner the night before. It takes about 15mins from start to finish.

Ingredients:

* Mashed potato (about 4 large potatoes worth. To save time you can always use the ready made mash from supermarkets)
* 1 medium onion
* 2 stock cubes (whatever are your favorite, I like vegetable)
* boiling water
* milk
* single cream (not necessary, but yum!)
* plain flour
* salt, pepper and herbs to taste

* Take a deep pot and fry the onions in a little veg oil or butter. You want to stir this continually as the aim is to soften the onions, not brown them!

* Add boiling water and two stock cubes to pot. Not too much as you'll be adding milk and cream later. About an inch and a half over the onions and stock cubes.

* Once stock cubes are dissolved, stir in mash milk and cream.

* Put onto a lower heat and let simmer. Then blitz in a food processor or with a hand blender. To make the soup thicker, add flour. To make it thinner add more cream or milk.

* Season as you like with black pepper, salt and herbs. I used dried mixed herbs (rosemary, basil, thyme)

Yum! :)

Wasnt sure whether to post this in the christmas bit or in here really...

Im thinking of doing hampers for people at christmas this year as we're a bit skint and I was going to put i n some chutney or jam in jars.

First question - how long do they keep? Do I need to make them a couple of days before, or do they last a while?

Second question - does anyone have any tried and tested recipes? Ive looked online but Im not really a chutney fan so I wont know if theyll taste right.

Thanks :)
