Do you like soft gingerbread? This recipe makes loads and they're so scrummy, if you cook them a little longer then they're crunchy, but I love mine soft and chewy mmmmm.
I made a plate of them for Ella's toddler Xmas party last year, cut them into mini gingerbread men and dotted them with icing buttons, they were scoffed down
You need a few different spices but they last for ages Happy baking

1lb2oz plain flour
1tsp baking powder
1tspbicarb
1tsp ground ginger
1tsp ground cinnamon
1/4 tsp ground cloves
5oz butter
6oz soft light brown sugar
3 tbsp black treacle
2 tbsp golden syrup
1 egg

Sift all dry ingredients and melt butter sugar and treacle and syrup together. Mix all together, adding egg, and roll out while dough is still warm, cut out shapes and place on a lightly greased baking tray. Bake for 10mins at 180. Wait until completely cool then ice if wanted, or dust with icing sugar.
