I'm Currently Feeling: 



Cheddar and Chives Perogies


These are a tad bit time consuming, but if you've got the free time and are in the mood for some delicious perogies... these are perfect!

24 servings

INGREDIENTS
3 cups flour
1 1/2 tsp salt
1 egg
1 cup cold water
6-7 baking potatoes
2 1/2 cups shredded cheddar cheese
Bundle of chives, chopped
Salt and Pepper to taste


DIRECTIONS


Dough:
*Combine flour, salt, egg, and water. Mix together. Cover mixture and put aside.

Filling:
*Boil potatoes and mash.
*Stir in cheese, chives and salt and pepper. (If you want, you can also add things such as cooked bacon or ham...mmmm)


*Roll dough out on a floured surface.
*Cut dough into circles and place a spoonful of filling into the middle.
*Fold over and pinch edges.
*Boil perogies for 4-5 minutes or until they float.
*Transfer to a skillet with oil and brown perogies (yummy if you fry with sauteed mushrooms and onions!).
*Serve with sour cream.

Ooohh, thank you so much!! My OH loves perogies, when we went to the States we lived on them!

They don't sell them in the UK as far as I'm aware, might make them as a suprise for him soon
