I had GD in both my pregnancies. At first it's a bit overwhelming but you get used to monitoring your blood glucose and figuring out the right things to eat.
Ask your doctor if it's possible for you to consult with a dietician, that helped me loads. What I remember mostly is this:
Breakfast was the most difficult for me, I couldn't eat 2 spoonfuls of cheerios and my blood glucose went through the roof! I had to limit my carbs severely at breakfast and eat more carbs 2 hours later, then it was ok.
3 meals a day was not a good plan, 5-6 smaller meals during the day kept the blood glucose down.
I ate nothing with added sugar, checked all labels for: sugar, honey, fructose, corn syrup etc etc. Artificial sweeteners like aspartame don't raise the blood glucose but I was carefull not to consume too much, only if I had severe cravings, lol.
I had to limit dairy products because of the lactose and I couldn't drink fruit juice. I also couldn't eat much fruit.
I tried to eat normal food but tried to add more protein and fiber to my diet.

Everything went normal with my deliveries and the babies were an average size. I did need an IV because I needed insuline and the babies were taken to the nicu for observation after the birth. I think all hospitals have a different protocol with GD women in labour so I'd ask my doctor about how this will affect your birthing experience.
