Easy/Fav Receipes


Thought I'd start a thread so we could share some easy receipes or some of our favourites. I'm not much of a cook , but that will have to change when I'm a mum (all mum's are good cooks!). I know some days will just be hectic and wanted some idea's of what could be cooked on one of those days.

I make a simple but yummy pasta dish.
I boil some pasta spirals and mixed veges. Once they are done i miss them together and pour over pasta sauce. then i scrape into an oven dish, cover with breadcrumbs and then grated chhese and i grill the cheese. x

Ooooh I love cooking!!! One of my favs at the moment is chicken or prawn noodle soup, it's a great comfort food - we had it for lunch yesterday.

Basically for 2 people you boil 1 1/2 pints of veg stock (I use swiss veg boullion to make the stock) and add:
a chuck of peeled ginger, halved
couple of cloves of garlic, halved
1 large chillie halved and deseeded
large pinch of sugar
good dash of thai fish sauce
lemongrass stalk, halved
ground black pepper
Or any combination of the above depending on what you've got in the cupboard...
Let it simmer for half and hour or so and then strain.
Add either a handful of prawns, or some chopped cooked chicken
Add some thai rice noodles (1 bundle from the sherwoods green pack is enough for 2, I snap them into thirds to make them easier to eat...)
Once the noodles are cooked (3 - 5 mins) it's ready to serve. You can add fresh corriander if you have some.

Reading that back it sounds a bit complicated, but believe me it's pretty quick and easy to make, and really really yummy!!

Bean and pesto bake... Yum!

Fry onion and garlic
chuck in tin of cannellini beans and juice and tin or borlotti beans (drained).
Add 2 tbsps of pesto.
Make a breadcrumb topping with some almonds and cheese.

Bake for 20-30 mins

I love:

-Sweet potatoes (done in oven or microwave like jacket potatoes)
-Splite them open and scoop out the insides into a bowl.
-Add 2 eggs, and some chopped chives and some paprika
-Put the filling back into the potato skins and grill for a few mins


On this morning I saw this and will be making it this wk:

-Boil some garden peas for about 3 mins
-Add peas and handful of mint to blender and blitz till really smooth (think you add a bit of veg stock to loosen the mixture - but this is on this morning website so if you fancy it check it out)
-Add sauce to some cooked spaghetti and chuck in some mozzarella chunks
