Baking boneless, skinless chicken breast....

Anyone know how to get it melt in your mouth tender? I don't want a whole lot of seasoning.. just want it a bit salty and not so dry. I know there is a trick to it but I haven't been able to find it. I've got the flavor right, just not as tender as I want.

Sorry, I know this is off topic but I've been craving some decent chicken like mad and if I want it I have to cook it cuz there isn't anyplace good nearby.

you could try wrapping it in tin foil and baking it in the oven. That always makes it pretty tender and juicy for me.

Ditto that - but take the tin foil off the last ten minutes or so, so that it will brown nicely.

Mmmm - and send some my way when its all cooked. I could go for some potatoes too while your at it!

Yes, I do......you smoother the chicken in 'olive oil' (or another oil) and this locks in the juices, so it does not get dry when you cook it~***

My father taguht me this trick~***

Thanks! I wanted to use tin foil tonight but I was out. I gotta remember to tell hubby to pick some up for tomorrow. And thanks for the olive oil idea! I wonder if margarine would work as well? Think I'll try both ideas tomorrow with fries...

The doctor gave me anti-nausea meds and now I can't stop eating everything in sight.

It may work (you could try one piece with margarine)....anything that is oil based to help 'seal' in the juices~

Thanks! I have some pretty terrible dental issues that I can't afford to fix so I can't eat any meat that doesn't just fall apart in my mouth. The only meat I've been able to get down lately is the grilled chicken that KFC has now. (it's delicious!!)

I'm also gonna try soaking the meat in salt water for an hour before I cook it tomorrow. I read that it helps make the meat taste better.

marinate it in ranch dressing and then shake and bake it about 25-30 min at 350 degrees
