I do it on 180c for about 30-35 minutes.. but I have a fan assisted oven so if you have conventional you might need to adjust the time slightly. As said, a bit of olive oil always helps.

My hubby is going to get me some tin foil now. Tonight I'm gonna try it in the tin foil and try brining it first as well. I think I've figured out where I've been going wrong too. I wasn't sticking enough of the thermometer in the meat to check the temp so it was getting over cooked while the temp still read 140 because too much of the metal was still exposed to air. I have to put the thermometer in long ways instead to prevent over cooking it i think. I'll get this cooking this down one day!!

Chicken came out delicious! My DH cleaned his plate in 5 minutes!
