Vol au Vent help please

Ok i want to do vol au vents for xmas buffet and wondered if you guy had any great filling ideas for them

I can only think of usual
Mushroom
seafood/prawn

any ideas with an idiots guide would be gratefully received

Chopped sausage chopped bacon and egg mayo mixed together.

Or with scrambled egg with the bcon and sausage(i have it that way for idont like mayo).
