Toad in the hole & gravy


Ingredients
2 tbsp olive oil
4 large sausages, spicy or Cumberland
4 medium eggs
225g plain flour
1 pint milk (600mls)
salt
ground white pepper
Method
1. Pre heat the oven to 220°C gas 7.
2. Place the oil into a 25cm non stick frying pan.
3. Add the sausages and brown nicely.
4. Place the flour, eggs and half the milk into a large bowl.
5. Whisk slowly gradually incorporating the flour from the edge of the bowl.
6. Finally add the rest of the milk and whisk well, then add salt and pepper.
7. Pour into the hot sausage pan and quickly place into the hot oven.
8. Straight away reduce the temperature to 200°C gas 6.
9. Cook for 25-35 minutes or until well risen and golden edges.
10. Once cooked remove from the oven and eat straight away with onion gravy.
Onion gravy
Serves: 4-6 persons
Preparation time:- 10 minutes
Cooking time: 30 minutes in total
Ingredients
2 tbsp olive oil
3 large onions, finely sliced
1 tbsp flour
1 tsp fresh thyme, chopped
2 pints good, strong beef stock
salt
freshly milled pepper
2 tbsp redcurrant jelly, optional, I love it personally
Method
1. Heat the oil, then add the onions and cook for 15 minutes to soften.
2. Add the flour and thyme.
3. Add the stock, jelly and cook gently for 20 minutes or until cooked and thickened.
4. Season well with salt and pepper, serve.
