lamb chop kleftiko


Serves 4
Ingredients
8 lamb chops
600g waxy potatoes (such as desiree) peeled and quartered
2 med onions thinly sliced
4 cloves garlic chopped
juice 1 lemon
zest 1/2 lemon finely chopped
1 tbs dried oregano
1 sprig rosemary
100ml white wine
30ml olive oil
salt and pepper
Method
1. Finely slice the onions and fry for a couple of min utes along with the garlic, add to a casserole dish along with the chops, potatoes, add all of the other ingredients and give a quick stir.
2. Season and cover with foil, and place on a tight fitting lid. Bake in an oven set at 190c for at least 2-3 hours. Check half way through if a little more liquid is required, if so add a little stock or water.
3. Serve with winter kale and pine nuts.

Ingredients
400g kale roughly chopped
50g toasted pine nuts
20g unsalted butter
salt and pepper
20ml water
Method
1. Toast the pine nuts in a dry pan until lightly coloured, and set aside. In a heavy pan add the kale, butter and the water, place on a lid and cook for approximately 10 minutes or until softened.
2. Season with salt and pepper and stir in the pine nuts.
