I would definitely complain through the hospital's complaints procedure, and get in touch with the PALS people at the hospital as it's their job to help you with stuff like that I think. Even though it was one doctor, you should still complain. If that doctor ever comes back to the UK and tries to get a job anywhere, he/she will need a reference from other hospitals and your complaint could mean that the hospital doesn't give one that leads to them being employed. Also, as others have said, there are other people who are supposed to ensure that the doctor is caring for your properly and if they didn't, or weren't able to for some reason (say for example, the hospital has a culture of doctors ignoring midwives and nurses), they need to change that.

I would want to know that they accept that they have done something wrong and I would want to know specific actions they have taken to solve the problems. If I didn't get a satisfactory response, then I would be looking at complaining to an outside body. I'm not sure what those are but there must be bodies who regulate hospitals. I wouldn't sue though as that doesn't help the NHS at all, so wouldn't be helping anybody else.

Good luck!
